The fruit we consume consists mainly of water, sugar, a fair amount of dietary fiber, vitamins and mineral salts contained in considerable quantities. Then there are fruit qualities, such as citrus fruits or strawberries, in which the sugars are less and the taste is more pronounced due to the high amounts of vitamin C.

The sugary fruit contains more sugars, of course. In apricots, cherries and peaches there is also a lot of vitamin A. Bananas and apricots have a good content of potassium, while phosphorus is present mainly in figs and dates. The sour-sugary fruit, like pears, apples, prunes and berries, contains fair quantities of both fiber and sugars, vitamins and minerals.

Dried fruit in shell (walnuts, hazelnuts, almonds and peanuts) contains a large amount of fat, which determines a rather high caloric value compared to other types of fruit. The dried fruit (figs, plums, bananas, apples, etc.) has more or less the same characteristics as fresh fruit, but obviously, having lost much of the water, it will be much caloric.
